Chocolate Avocado Pudding

If you love avocados you’ll LOVE this pudding! It’s one of my favorite simple snacks to make. So simple, it almost doesn’t need a recipe so I’ve provided you with several beautiful photos to help persuade you to make it. (And, the recipe at the end.)

I’m a bit of a purist so I like plain chocolate the best but feel free to add a 1/2 tsp. of extract to shift the flavor to something extraordinary. I’m thinking caramel, raspberry or mint would be lovely.

I use a high speed blender to make my pudding but it can be made in a food processor just as easily. You’ll want to blend it very, very well so it’s velvety smooth and no pieces of avocado remain. I use heavy cream and a sugar alternative in mine to keep it in S-mode for the Trim Healthy Mama plan but if you’d like to make it vegan, replace the cream with a milk alternative. I’ve done it both ways and it’s delicious!

This creamy pudding is naturally gluten-free, can be made dairy-free and vegan. Add a flavor extract to shift to different flavors such as caramel, raspberry or mint! Perfect snack or dessert.
Ingredients
  • 2 avocados
  • 5 Tbls. cocoa
  • ¼ cup honey, raw sugar or equivalent sweetener (to taste)
  • 6 Tbls. heavy cream or milk alternative
  • 1 tsp. vanilla
Instructions
  1. Blend all in a food processor or blender until smooth.
  2. Serve immediately or chill until ready to serve.
