Cinnamon Roll Birthday Cake {gluten-free!}

Ingredients
  • 1 pkg yeast (2 ¼ tsp)
  • 1 cup warm milk (115˚-120˚F) {This should be pasteurized or scalded}
  • ½ cup cane sugar
  • ⅓ cup butter, melted
  • 2 eggs
  • 4 cups America’s Test Kitchen gluten-free flour mix
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 4 tsp. baking powder
  • 2 tsp. xanthan gum
Instructions
  1. Combine warm milk and sugar.
  2. Add yeast, stir and allow to work for 10 minutes.
  3. Combine all the dry ingredients and set aside.
  4. In the bowl of a mixer, pour in milk mixture.
  5. While mixing add butter and eggs.
  6. Continue mixing on low adding the flour mixture until it all comes together in a ball.
  7. Mix for another 30 seconds to one minute.
  8. Remove dough from mixer and place on greased plastic wrap.
  9. Roll into a 24”x13” rectangle using plastic wrap on top also.
  10. Using the plastic wrap begin rolling dough from long side to form a log 24” long.
  11. Cut into 2” pieces, place in baking dish 9”x13”.
  12. Bake at 350˚ for about 30 minutes or until golden brown on top.
