Italian Wedding Soup {gluten-free}

- One recipe of gluten-free meatballs (follows)
- 1 cup short grain, brown rice, cooked
- 6 cups bone broth, chicken or beef
- 4 cups spinach, chopped into bite-size pieces
- Heat bone broth in stock pot over high heat.
- When boiling, add meatballs, lower heat and simmer for 15 minutes.
- Just before serving, add spinach and turn off burner.
- Serve with crusty bread and a sprinkle of Asiago cheese.
