  • 2.5 oz. tapioca starch
  • 1 Tbls. xanthan gum
  • ½ tsp. salt
  • 1 tsp. basil, dried
  • 1 tsp. garlic powder
  • 4 large eggs (to equal 1 cup)
  • 1 Tbls. oil (olive oil, avocado oil or coconut oil)
Instructions
  1. Pulse the dry ingredients in a food processor.
  2. Combine eggs and oil.
  3. With processor running, slowly add eggs and oil.
  4. Pulse until dough forms a large ball.

  6. Divide into 6 pieces and continue as directed by your pasta maker directions or roll out and cut by hand.
  7. Note: This dough is surprisingly easy to work with. It's very forgiving and nearly like wheat dough. {insert Angels singing here!}

  9. Cook in boiling water for 2-3 minutes.
  10. Drain and rinse slightly.
  11. Return to boiling pot and put lid on to keep warm and moist.
