Simple Vinaigrette Dressing

- 50 ml liquid oil (avocado or olive oil are good choices)
- 25 ml vinegar (white wine vinegar, rice vinegar or apple cider vinegar are good choices)
- 1 Tbls. Honey (I use local raw honey)
- ¼ tsp. salt (I use Himalayan pink salt)
- ½ tsp. Dijon mustard
- Pinch of fresh ground black pepper
- ½ tsp. garlic, minced
- 1 Tbls. fresh herbs of your choice (I use a mixture of oregano, thyme and basil)
- Place all ingredients in a large glass.
- With a small whisk, blend ingredients together until it begins to emulsify a bit.
- Allow to sit at room temperature for at least 15 minutes before serving to allow flavors to blend.
- Whisk before pouring to reblend.
- Store in refrigerator but bring to room temperature before using each time.
- Will last about a week, refrigerated.
