Amish Macaroni Salad {gluten-free}

Ingredients
  • 12 oz. macaroni, cooked and cooled (rice pasta for gluten-free version)
  • 2 hard-cooked eggs*, diced
  • ⅓ cup diced carrots
  • ⅓ cup diced celery
  • For dressing:
  • 1 ¼ cup mayonnaise*
  • ½ cup sugar
  • 2 Tbls. white wine vinegar
  • ½ tsp. Dijon mustard
  • ½ tsp. salt
  • ¼ tsp. paprika
  • ¼ tsp. garlic powder
Instructions
  1. Combine the dressing ingredients.
  2. Combine the macaroni, eggs, carrots and celery.
  3. Pour dressing over the macaroni mixture and stir gently.
  4. Allow to sit at room temperature for about 15 minutes and stir again.
  5. Chill for an hour or so and serve.
