Sweet Heat, Buffalo Hot Wings

- 3 lbs. wing sections
- salt & pepper to season
- ½ cup butter
- ½ cup Frank’s hot sauce
- 1 Tbls. maple syrup (For THM, use 1 Tbls alternative sweetener and ½ tsp. maple flavoring)
- Heat oven to 400˚. Use convection, if you have it.
- Spread out wings on large sheet pan so that they’re not touching.
- (I use a sheet with a grate overtop so they get crispy on all sides)
- Bake wings for 15 minutes, turn over and bake for another 15 minutes.
- Turn oven to broil.
- Move wings to top shelf and broil for about 5 minutes or until as brown as you want them to be, watch them carefully.
- For the sauce:
- Melt butter.
- Add hot sauce and maple syrup (or alternative).
- Stir well.
- Drizzle or drench wings in sauce.
- Serve with blue cheese dressing.
