Gluten-free Blueberry Crumb Pie

Serves: 1 pie
Ingredients
  • 1 8" gluten-free pie crust (see notes)
  • For the filling:
  • 5 cups frozen blueberries
  • 1 cup cane sugar
  • ¼ cup gluten-free flour mix
  • 2 Tbls. melted butter
  • For the crumb topping:
  • ¾ cup gluten-free flour
  • ¾ cup cane sugar
  • 3 Tbls. melted butter
  • 1 tsp. cinnamon
Instructions
  1. Preheat oven to 375˚.
  2. Prepare pie crust and set aside.
  3. Combine blueberries, sugar and flour and pour into pie shell.
  4. Drizzle with melted butter.
  5. In a bowl, combine flour, sugar and cinnamon.
  6. Drizzle in melted butter and cut in with a fork or pastry blender until you have small crumbs.
  7. Spinkle on top.
  8. Bake for 1 hour or until blueberries are bubbling around the edges and the top of the pie is toasted brown.
  9. Cool completely before serving.
