Gluten-free Blueberry Crumb Pie

Serves: 1 pie
- 1 8" gluten-free pie crust (see notes)
- For the filling:
- 5 cups frozen blueberries
- 1 cup cane sugar
- ¼ cup gluten-free flour mix
- 2 Tbls. melted butter
- For the crumb topping:
- ¾ cup gluten-free flour
- ¾ cup cane sugar
- 3 Tbls. melted butter
- 1 tsp. cinnamon
- Preheat oven to 375˚.
- Prepare pie crust and set aside.
- Combine blueberries, sugar and flour and pour into pie shell.
- Drizzle with melted butter.
- In a bowl, combine flour, sugar and cinnamon.
- Drizzle in melted butter and cut in with a fork or pastry blender until you have small crumbs.
- Spinkle on top.
- Bake for 1 hour or until blueberries are bubbling around the edges and the top of the pie is toasted brown.
- Cool completely before serving.
