Cashew Almond Bites

Ingredients
  • 1 cup Raw cashews
  • ½ cup Almond flour
  • ¼ cup Sunflower seeds
  • 1 Tbls. Chia seeds
  • ¼ cup Sweetener (I used Lakanto. See notes for other options.)
  • ¼ tsp. Salt
  • Almond butter – enough to make it hold together (about 6 Tbls., if it’s very soft and loose, more if it’s stiff)
  • 1 Lily’s chocolate bar, melted
Instructions
  1. In a food processor, add cashews, sunflower seeds and chia seeds.
  2. Process until fine crumbs.
  3. Add Almond flour, sweetener and salt.
  4. Process until incorporated.
  5. Add almond butter, 2 Tbls. at a time, blending after each addition, until mixture forms a cohesive ball.
  6. Remove from food processor and form into 1” balls.
  7. Freeze for at least 2 hours.
  8. When ready to coat, melt chocolate bar until ¾ of it is smooth and ¼ remains in pieces.
  9. Remove from heat and stir until everything is melted and smooth.
  10. Roll each ball in chocolate and return to the refrigerator.
  11. Store in the refrigerator.
