Gluten-free Chicken Strips
 
 
Crispy, crunchy chicken strips made low-carb and gluten-free! Triple the recipe so you have some for later!

Ingredients
  • 1½ - 2 lbs. boneless, skinless chicken breasts or chicken tenders
  • (For chicken breasts, slice laterally and then into strips.)
  • 3 large eggs, slightly beaten
  • 2 Tbls. heavy cream
  • 2 Tbls. mayonnaise
  • salt and pepper to taste
  • ½ cup THM baking blend OR almond flour
  • ½ tsp. onion powder
  • Oil for frying (I prefer avocado oil or lard)
Instructions
  1. Beat eggs, heavy cream, mayo and salt and pepper.
  2. Mix together remaining dry ingredients.
  3. Dip one chicken piece in the wet mixture.
  4. Dip it into dry ingredients.
  5. Place on baking tray while you finish prepping the rest.
  6. Heat up oil in a shallow frying pan about 1" deep. It should sizzle when you drop a small piece of bread in it.
  7. Fry each piece until coating is a medium brown, flip and cook second side.
  8. Repeat until all pieces are done.
