Ingredients
  • 3-4 boneless, skinless chicken breasts
  • 4-5 large eggs
  • 3 cups gluten-free bread crumbs or gluten-free stuffing mix, crushed into crumbs
  • ½ tsp. each garlic powder, onion powder & Italian seasoning
  • 1 15 oz. jar spaghetti sauce, commercial or home-canned
  • Mozzarella cheese and fresh herbs to top
Instructions
  1. Preheat oven to 350˚.
  2. Cut each chicken breasts laterally to make two thinner pieces out of each whole breast.
  3. In a bowl, beat eggs until smooth. Pour into a flat container such as a glass storage container large enough to lay a piece of chicken in flat.
  4. Combine bread crumbs, garlic powder, onion powder and Italian seasoning in a second flat container.
  5. Dip each chicken piece in egg then into the crumbs, making sure to coat them thoroughly each time.
  6. When all the pieces are coated, place them in a large baking dish and bake for 30 minutes.
  7. After 30 minutes, remove from oven. Remove chicken from baking dish to a plate and pour half the spaghetti sauce onto the bottom of the baking dish and spread evenly.
  8. Replace the chicken pieces into the dish and pour the other half of the sauce on top of the chicken making sure to not cover the whole thing. You want some crunchy areas!
  9. Sprinkle with mozzarella cheese.
  10. Bake for an additional 15-20 minutes or until chicken is golden browned and cheese is melted.
  11. Serve immediately.
