Parmesan & Lemon Spinach Pasta Bowl

Refreshing one-dish pasta meal with a punchy lemon flavor and great texture from parmesan cheese and bread crumbs. Add some grilled chicken for extra protein.

Serves: 6-8 servings
Ingredients
  • 1 Tbls. garlic, minced
  • ghee or avocado oil to cook garlic
  • 2 cups broth (chicken or vegetable)
  • ¼ cup lemon juice, fresh squeezed
  • ½ cup Parmesan cheese, grated
  • ½ cup gluten-free bread crumbs
  • 1 lb. gluten-free pasta, cooked and drained
  • 1 tsp. fresh thyme
  • salt & pepper to taste
  • fresh tomatoes to garnish, optional
Instructions
  1. In a large skillet, heat oil and cook garlic to light brown and fragrant.
  2. Add broth and lemon juice and simmer for about 3-5 minutes.
  3. Add cooked pasta, thyme, ¼ cup parmesan cheese and ¼ cup bread crumbs to skillet and stir to incorporate.
  4. Add salt & pepper to taste.
  5. To serve, place pasta in a serving bowl and sprinkle with remaining parmesan cheese and bread crumbs. Garnish with extra thyme and fresh tomatoes if desired.
