Mexican Street Corn

Ingredients
  • 6 ears of fresh corn
  • ΒΌ cup butter
  • Juice from one lime
  • 1 Tbls. taco seasoning
  • Mayonnaise (optional)
  • Cilantro, chopped
  • Cotija cheese, crumbled
  • Salt & pepper to taste
Instructions
  1. Boil the corn until tender.
  2. Heat up the grill while the corn cooks.
  3. When corn is tender, grill until kernels just start to char.
  4. Combine the butter and taco seasoning and baste grilled corn.
  5. If using mayo, spread some on the corn now.
  6. Serve sprinkled with cilantro and cheese.
  7. Salt and pepper to taste.
