Summer Pesto

Ingredients
  • 4 cups basil
  • 4 cups spinach
  • 1 cup parmesan cheese
  • ½ cup pine nuts
  • ¼ cup olive oil
  • 2 Tbls. lemon juice
  • Salt & pepper to taste
Instructions
  1. Combine the basil, spinach, cheese and pine nuts in the food processor.
  2. Pulse to chop leaves.
  3. Add lemon juice and pulse to combine well.
  4. Add olive oil a little bit at a time while pulsing.
  5. You may need more or less depending on the consistency you want.
  6. It should be spreadable but not liquid.
  7. Add salt and pepper to taste and stir together.
