Sweet & Creamy Tapioca Pudding

Ingredients
  • 7 Tbls. granulated tapioca
  • 6 Tbls. cane sugar
  • 2 egg yolks
  • 4 cups milk
  • ¼ tsp. salt
  • 2 egg whites
  • 4 Tbls. cane sugar
Instructions
  1. Mix the first five ingredients together in a large saucepan.
  2. Heat over medium heat stirring often and constantly as it thickens.
  3. Bring to full-rolling boil.
  4. Remove from stove and cool to room temperature.
  5. Whisk egg whites until soft peaks form.
  6. Sprinkle sugar overtop in four separate increments, beating in between.
  7. Beat to stiff peaks.
  8. Gently fold in ⅓ egg whites into cooled pudding.
  9. Add remaining egg whites and fold gently.
  10. Chill thoroughly before serving.
