Spelt Sourdough Waffles with Creamy, Strawberry Yogurt "Syrup"

- Waffles:
- 1 cup starter
- 2 eggs
- ¼ cup melted butter {or coconut oil for dairy-free}
- 1 ¼ cup whole milk {or alternative milk for dairy-free}
- 1 Tbls. honey
- 1 tsp. vanilla
- 1 cup spelt flour
- 1 ½ tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- Creamy Strawberry, Poppy Seed “Syrup”
- 1 ½ cup Greek yogurt, plain
- 1 cup fresh strawberries
- 2 Tbls. honey (or sugar-free sweetener to taste)
- 1 tsp. poppy seeds
- 1 basil leaf, optional
- For the waffles:
- Combine all wet ingredients.
- Combine all dry ingredients.
- Mix wet and dry together.
- Waffle.
- For the "syrup":
- Blend all ingredients in a blender.
- If “syrup” is not thick like a rich smoothie, add ½ tsp. xanthan gum or glucomannan to thicken.
- Use as a dip or pour over waffles or pancakes with lots of butter.
