Spelt Sourdough Waffles with Creamy, Strawberry Yogurt "Syrup"

A great way to use up extra sourdough starter!

Ingredients
  • Waffles:
  • 1 cup starter
  • 2 eggs
  • ¼ cup melted butter {or coconut oil for dairy-free}
  • 1 ¼ cup whole milk {or alternative milk for dairy-free}
  • 1 Tbls. honey
  • 1 tsp. vanilla
  • 1 cup spelt flour
  • 1 ½ tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • Creamy Strawberry, Poppy Seed “Syrup”
  • 1 ½ cup Greek yogurt, plain
  • 1 cup fresh strawberries
  • 2 Tbls. honey (or sugar-free sweetener to taste)
  • 1 tsp. poppy seeds
  • 1 basil leaf, optional
Instructions
  1. For the waffles:
  2. Combine all wet ingredients.
  3. Combine all dry ingredients.
  4. Mix wet and dry together.
  5. Waffle.
  6. For the "syrup":
  7. Blend all ingredients in a blender.
  8. If “syrup” is not thick like a rich smoothie, add ½ tsp. xanthan gum or glucomannan to thicken.
  9. Use as a dip or pour over waffles or pancakes with lots of butter.
