Strawberry Rhubarb Crumble {gluten-free}

- FOR THE FRUIT:
- 2 c. Rhubarb stalks, chopped
- 3 c. Strawberries, cleaned
- ¾ c. Sugar
- 2 Tbls. gluten-free flour
- Juice from ½ lemon
- -
- FOR THE TOPPING:
- 1 c. Sugar
- 1 c. Gluten-free flour
- ⅓ c. Melted butter
- ½ - 1 tsp. Ground cardamom (optional)
- FOR THE FRUIT:
- Combine all ingredients and mix thoroughly.
- Pour into baking dish.

- FOR THE TOPPING:
- Combine all ingredients and mix thoroughly.
- Gently spread on top of fruit.
- Bake at 350˚ for 45 minutes or until bubbly and top is lightly browned.
- Remove, allow to cool for 30 minutes.
- Serve warm or chill before serving.
