Chocolate Avocado Pudding Pops

Delicious, low-carb pudding pops made with avocado and topped with peanut butter and chocolate.

Ingredients
  • 2 avocados
  • 5 Tbls. cocoa
  • ΒΌ cup low-carb sweetener (or equivalent amount of honey or sugar to taste, if not eating low-carb)
  • 6 Tbls. heavy cream (or milk alternative if dairy-free)
  • 1 tsp. vanilla
Instructions
  1. Blend all in a food processor or blender until smooth.
  2. Fill popsicle molds and insert popsicle sticks.
  3. Freeze for at least 24 hours.
  4. Remove from molds by dipping the bottom of the mold in hot water for about 5 seconds. Popsicles should slide out with a little pressure.

  6. TOPPING SUGGESTIONS:
  7. Melted chocolate (use a sugar-free chocolate bar for low-carb)
  8. Chopped peanuts
  9. Peanut Butter Hard Shell: Equal amounts of peanut butter and coconut oil with a little sweetener added.
