[#ad] Here’s another delicious recipe made with dressings from my friends at Fat & Happy Foods. Their balsamic vinaigrette makes everything so good – including this salmon that gets marinated in it for a short time and then topped with a fresh strawberry salsa.
It’s a quick meal to satisfy both your savory and sweet tooth. The great thing about this dressing is that it’s super low in carbs and it’s made with MCT oil instead of nasty industrial seed oils.

You can read more about MCT oil here.
You can find Fat & Happy’s balsamic dressing here. If you’re interested in their other flavors, they have both Italian and Ranch.

Balsamic Salmon with Strawberry Salsa
Marinated salmon topped with a strawberry balsamic salsa and served on a bed of spinach. Perfect for a low-carb lunch!
Ingredients
4 Four-ounce servings of wild-caught salmon
1 Bottle Fat & Happy Balsamic Dressing
For the salsa:
2 Italian tomatoes, chopped
½ cup diced strawberries
2 green onions, sliced
1 Tbls fresh basil leaves, minced
¼ tsp salt
pepper to taste
¼-1/3 cup Fat & Happy Balsamic Dressing
Instructions
An hour before cooking the salmon, place the pieces in a glass container and pour ½ cup dressing over the top. Marinate, turning often, for one hour.
When ready to cook, preheat oven to 375˚.
Place marinated salmon pieces on parchment on a baking sheet.
Discard marinade.
Bake for 15-20 minutes or until salmon flakes easily.
Meanwhile, to prepare the salsa, place all salsa ingredients in a bowl and stir well to combine.
Serve on a bed of spinach or with cauli-rice for a great meal.
