Ingredients
8 cups cauliflower, cut into florets
1 cup parmesan cheese
1 cup gouda cheese, shredded
1 cup Mexican blend cheese (or your choice of cheese)
½ cup butter
½ cup cream cheese
¼ cup milk
1 tsp. garlic, minced
1 tsp. onion powder
1/4 tsp. paprika
1 lb. bacon, cooked and crumbled (omit bacon for vegetarian option)
5 green onions, sliced thin

Heat oven to 350˚.
Prepare a 9”x13” baking dish with non-stick cooking spray (I use this avocado oil spray)
Place cauliflower florets, gouda cheese and Mexican cheese into a large mixing bowl.
Combine butter, milk, cream cheese and parmesan cheese in a saucepan over low heat. Heat until completely melted when stirred.
Add garlic, onion powder and paprika to cheese sauce and pour over top of cauliflower mixture.
Add half the bacon and half the green onions and stir to combine.
Pour into baking dish and spread evenly.
Sprinkle with the remaining bacon and green onions.
Bake at 350˚ for 45 minutes to 1 hour or until cauliflower is tender and top is lightly browned.
