Warm, inviting spices fill this gingerbread pear cake drizzled with caramel.

  • Total Time: 1 hour 40 minutes
  • Yield: 10 servings

Ingredients

2 ¼ cup gluten-free flour (I used Measure for Measure King Arthur Flour mix)
½ cup sugar
½ cup mild molasses
¾ cup hot water
½ cup butter
2 whole eggs, large
1 tsp baking soda
1 ½ tsp ground ginger
1 tsp cinnamon
½ tsp salt
¼ tsp xanthan gum

2 Tbls butter, melted
½ cup brown sugar
4 ripe pears, cleaned and halved
Caramel sauce to drizzle

Instructions

Heat oven to 350˚.
Grease and flour a 9” springform pan.
Pour 2 Tbls melted butter into springform pan and sprinkle brown sugar on top.
Place pears cut-side down onto sugar.
In a large mixing bowl, cream butter and cane sugar together.
Add eggs and mix well.
Add remaining ingredients and mix for 2 minutes.
Pour batter on top of pears and spread to flatten out.
Bake for 1 hour, 10 minutes or until top is domed and firm.
Remove from oven and cool completely.
When cooled, run a sharp knife around edge of pan and remove ring from springform pan.
Carefully flip cake over onto cake plate or cake stand.
(If cake is very domed, use a sharp bread knife to cut the dome off to flatten it first.)
Drizzle cake with caramel sauce and serve.
