Pounded, tender, moist pork loin coated in gluten-free Panko bread crumbs make the best dinner! Goes great with a generous portion of fresh, squeezed lemon juice.

  • Total Time: 40 minutes
  • Yield: 8 servings

Ingredients

2 lb boneless pork loin, cut into 1” thick rounds
4 whole eggs
¼ cup gluten-free flour
¼ tsp salt
¼ tsp pepper
1 cup gluten-free Panko bread crumbs
Italian Seasoning, to taste
Oil to deep fry in (lard, refined coconut oil or avocado oil)

Instructions

On a cutting board, pound pork pieces thin, to about ½” thickness.
Place flour, salt and pepper in a flat bowl to dip pork.
Beat eggs with 2 Tbls water in another bowl to dip pork.
Place Panko in a third bowl.
Dip pork in flour, then egg, then Panko and place on a baking sheet in a single layer.
Place frying oil in a large, deep pan and heat to about 400˚.
If you don’t have a thermometer, test the oil with a small piece of gluten-free bread. If it sizzles around the edges, it’s ready to fry.
Place pieces of pork in the oil and fry until golden brown, about 3 minutes each side.
Remove to a baking pan and place in a warm oven.
Serve with generous portions of lemon wedges.
Goes great with seasoned, oven fried potatoes and green beans.
