My grandma makes cookies similar to these every year and they’ve been a favorite for a long time, but they’re never gluten-free. So, on a day last week that I was avoiding office work, I decided to take a stab at making them. Looking around a few recipes, I realized that it uses graham crackers. Who knew? I had no idea but I can solve crusty problems no problem.

Magic Toffee Bars

I have lots of ways to make a delicious crust that doesn’t involve using cookies made with wheat. I opted to use oatmeal in this recipe and they’re SOOO good!

These bars have layer upon layer of flavor and texture. I used pecans instead of walnuts, toffee chips and of course, sweetened condensed milk to hold it all together. (Milk is notorious for having “extra” ingredients in it like hormones so buy organic to avoid issues with ingested hormones.)

To keep the sweetness level of these lower, I used organic, unsweetened coconut because with chocolate, toffee and sweetened condensed milk, the carb level is already over the top. Coconut and oatmeal adds a little fiber, at least.

The boys in the house scarfed them down. Everyone LOVED the changes that were made. Pretty sure you will too!

Toffee Chips
Chocolate chips
Organic oats
