There are a couple recipes in our family that we eat often. Very often.

This white wine onion gravy is one of them. I had no idea what to name it because we just call it “the cream sauce.” But, it’s really a white wine onion sauce that you can put on everything like gravy. It’s great to use on veggies instead of butter and it goes it both veggies and meats. Caramelizing the onions add a wonderful sweetness and the white wine gives it a rich, luscious flavor.

We eat it with pasta, potatoes, chicken, sausage, and all kinds of green veggies. It really does go with anything!

As you may know, I don’t shy away from fat. In fact, the cream in this recipe is one of the things I look forward to the most! Seriously, cream.

Makes me remember my days in France where they embrace all things creamy.

I bought this fresh cream at a farm in Lancaster county. It’s thick, rich and completely, over-the-top decadent. It gets added after you’ve reduced the wine by about half. This concentrates the flavor of the wine while the cream balances out the acid.


White Wine Onion Gravy

Ingredients
  • 2 medium onions, sliced thin
  • 2 Tbls. garlic, minced
  • 6 boneless, skinless chicken breasts
  • 2 cups dry white wine
  • 2 cups heavy cream
  • salt & pepper to taste
  • parsley to garnish
Instructions
  1. Heat oven to 400˚.
  2. In a large, heavy skillet brown chicken breasts on both sides. You may need to do this in batches.
  3. With each batch of chicken browning, add onions and brown them alongside the chicken.
  4. When chicken is browned, remove from pan, put on baking sheet and place in oven.
  5. The chicken will finish cooking while you prepare the sauce.
  6. In the skillet, on medium heat, add the garlic and brown.
  7. Once the garlic is browned, carefully pour in the white wine. It will sizzle and steam.
  8. Continue simmering the wine sauce until reduced by half.
  9. Add the cream, salt and pepper and heat through but do not boil.
  10. When chicken is cooked through, place on serving dish and pour sauce overtop of the chicken.
  11. Garnish with minced parsley.
  12. This is wonderful served with pasta and a green veggie.
