I’m not sure this Roasted Butternut Squash really qualifies as a formal recipe but I’m going to share it with you anyway. My sister’s been making this dish for years. I was never a fan of butternut squash until I had it at her house. I can’t remember what she made it with but I’ve served it with both pork and chicken and it goes well with either. I mean … garlic, right?

I’m sure you’ll love how simple and quick it is to make too. A little cutting, a little tossing and a little roasting. Done.

Garlic & Thyme Roasted Butternut Squash

Ingredients
  • 2 medium butternut squash cleaned and cubed
  • 2 Tbls. avocado oil or EVOO
  • 1 medium red onion, cubed
  • 1 Tbls. minced garlic
  • ½ tsp. course salt
  • fresh ground pepper
Instructions
  1. Heat oven to 425˚.
  2. Toss all together in a large mixing bowl.
  3. Heat a large baking pan in the oven for 10 minutes.
  4. Remove pan and pour squash mixture onto hot pan.
  5. Return to the oven for about 30 minutes or until squash is tender.
  6. Serves 4.
