This really isn’t a two ingredient recipe. Be forewarned. I use premade coconut milk here. That means the recipe ingredient list is about 10 ingredients long but at least 9 of them are already mixed up for you. So, let’s get to it!

Dairy-free Coconut Milk Chia Pudding

2 Tbls. chia seeds (I used Nutiva white chia seeds)
6 oz. flavored coconut milk (I used SoDelicious brand)

Add chia seed to jar.
Pour coconut milk in, stir well.
Place in the refrigerator for at least 3 hours.

The thickness of the pudding depends on the ratio of seeds to milk. If you like a pudding that’s a little thicker, use 5 oz. of milk instead. If you’d like it a little more drinkable like a smoothie, you can use 7 oz. of coconut milk. Have fun with it![/rightcolumn]
